Miniature Bundt Cakes (and something for July 4th!)

the fourth of july. one of the best times to gather with family and friends (besides thanksgiving). having great food is one of those key ingredients for the perfect July 4th recipe. so, why not make these super-easy, mini bundt cakes with fruit glaze?!

SUPPLIES
  • one package yellow cake mix
  • eggs (follow mix directions for how many to use)
  • 2 tbsp. milk
  • 1 1/2 cup powdered sugar
  • mini bundt cake pan
  • various fruits

follow the directions on your cake mix according to making the batter, preparing the pan, and the cook time.

while the cakes are baking, make your glaze. take 1 1/2 of powdered sugar and mix it with 2 tbsp. of milk. stir together and add some extra milk and sugar to taste.

you can also use your time to dice your fruits and combine them with some of the fruit glaze you just made.

once the cakes are finished baking and are fully cooled, cut the "top" or muffin-y part off, giving your bundt cake a flat bottom.

once the bundt cake's "top" has been removed, drizzle on the glaze. (if you want that "overflown look" you may have to add some extra and force it to spill with a spoon)

once the bundt cake is dripping with glaze, sample (because a baker ALWAYS samples their work, right?) and enjoy! these mini, perfectly sized bundts will be a hit at your fourth of july gathering! xo. Molly
